Overview

We are seeking an experienced Beverage Manager with strong nightclub and hotel background to oversee a high volume rooftop bar and nightlife operation in Chicago. This is a senior leadership role within a flagship property that blends elevated hospitality, premium beverage programs, and high energy entertainment. The operation generates approximately $10M annually, with the rooftop converting into a nightclub on weekends producing up to $50K per night.

This role is focused entirely on beverage, nightlife, and guest experience. Culinary operations are handled separately by the Executive Chef.

Key Responsibilities

• Lead all beverage and nightlife operations for a high volume rooftop bar and weekend nightclub

• Oversee a team of 30+ staff members including managers and supervisors

• Manage premium wine program with strong knowledge of high end wine lists

• Oversee bottle service program including liquor selection, pricing, and execution

• Drive weekend nightclub operations with a focus on revenue, guest experience, and staff performance

• Handle entertainment programming including DJ booking and talent coordination

• Partner with internal teams on promotions, special events, and brand activations

• Support external marketing efforts and partnerships to drive traffic and brand awareness

• Maintain strong cost controls, inventory management, and compliance standards

• Ensure consistent service standards during both rooftop lounge and nightclub formats

Required Experience

• Proven experience as a Beverage Manager, Nightclub Manager, or similar leadership role

• Prior hotel experience strongly preferred

• Demonstrated success in high volume beverage driven operations

• Strong background in nightlife, bottle service, and premium spirits

• Solid understanding of wine programs including high end selections

• Direct experience with DJ booking and entertainment coordination

• Experience managing large teams with multiple layers of leadership

• Strong operational, financial, and people management skills

Compensation and Benefits

• Base salary range: $100,000 to $115,000

• Bonus potential up to 20 percent
