EXECUTIVE CHEF-FINE DINING, HIGH VOLUME

Core Responsibilities

  • Culinary Leadership: Oversees all daily food production and ensures every dish meets established recipes, quality, and presentation standards.
  • Staff Management: Directs line cooks, prep cooks, and dishwashers; handles scheduling, training, performance evaluations, and disciplinary actions.
  • Operational Oversight: Manages inventory levels, vendor relationships, and ordering of raw food products and supplies to maintain "par levels".
  • Quality & Safety Compliance: Enforces strict adherence to state and federal health regulations, sanitation standards, and food safety protocols (e.g., ServSafe).
  • Financial Performance: Monitors food and labor costs, assists with budget development, and implements waste reduction strategies. 
Key Skills & Qualifications
  • Experience: Previous high-volume kitchen management experience is typically required for this level.
  • Leadership: Strong ability to foster a positive team environment and maintain high staff morale in a fast-paced setting.
  • Business Acumen: Proficiency in inventory control and food cost management.
  • Flexibility: Availability to work varied shifts, including evenings, weekends, and holidays.
