Job Description
We are seeking a Director of Restaurants for our full-service, luxury, independent hotel in beautiful Nashville, Tennessee. Our Director of Restaurants will be responsible for our A la Carte Dining Outlets, In Room Dining, and the overall food and beverage experience on property. Our Director of Restaurants will be responsible for cultivating a dynamic team dedicated to excellence, ensuring our dining service remains at the pinnacle of refinement and hospitality. Responsibilities
- Developing and implementing strategic plans for each restaurant, including marketing strategies and community engagement initiatives.
- Ensuring exceptional guest experiences through high-quality food and service standards.
- Managing and training a diverse team of staff to maintain a positive working environment.
- Setting and achieving financial goals for each restaurant, including budgeting, forecasting, and cost control measures.
- Collaborating with the Executive Chef to create innovative menus that highlight local ingredients and culinary trends.
- Maintaining relationships with suppliers to ensure that the highest quality ingredients are sourced at the best prices.
- Implementing and enforcing health and safety standards to ensure a safe dining experience for guests and staff.
- Stay updated on industry trends and developments, including innovative technologies, techniques, and regulations. Leading and mentoring the kitchen team to foster a collaborative and high-performing work environment, including training sessions to improve staff skills and efficiency.
- Collaborating across departments, such as front-of-house management, to ensure seamless coordination and exceptional guest experiences.
- Monitoring inventory levels and optimizing stock management to minimize waste, while ensuring consistent availability of essential ingredients.
- Developing and managing budgets to align with the restaurant's financial goals, including setting strategies for revenue growth and cost reduction.
- Designing and refining plating standards to maintain consistency in food presentation that aligns with the establishment's brand and expectations.
- Actively engaging with guests to gather feedback on food quality and service, using insights to drive continuous improvement in culinary offerings.
- Creating seasonal promotional menus or special event offerings to attract new patrons and enhance the dining experience for returning guests.
- Ensuring all kitchen operations comply with local and national food regulations, conducting routine inspections, and promptly addressing any discrepancies.
- Spearheading initiatives to incorporate sustainable practices, such as reducing food waste, using eco-friendly packaging, and sourcing organic or local ingredients.
- Building a positive reputation for the establishment through participation in industry events, culinary competitions, and community outreach programs.

Qualifications
- Minimum of 5-7 years in restaurant management within a fine dining restaurant, hotel, resort, or private club.
- Must possess the ability to erase the imaginary line of separation between the FOH and BOH.
- Must have the ability to create and create an exceptionally positive work environment for our associates.
- Strong understanding of food and beverage operations, including menu planning, budgeting, and inventory management.
- Strong critical thinking skills and the ability to remain calm under pressure in a challenging environment.
- Familiarity with health and safety regulations is required to ensure compliance.
