We’re seeking a visionary Executive Sushi Chef to helm an omakase-focused program inspired by the highest international standards—think World’s 50 Best, Michelin-tier hospitality, and the meticulous soul of Edomae tradition.

You’ll take full ownership of the sushi operation: aging fish with intention, orchestrating flavor with restraint, and delivering an experience that whispers elegance without compromise.


What You’ll Own


  • Full control of all sushi operations—nigiri, sashimi, maki, and curated omakase service
  • Development of seasonal menus that blend craftsmanship, story, and restraint
  • Mastery of aging techniques: shime, kobujime, yubiki, jukusei
  • Precise management of premium seafood inventory, cost controls, and vendor sourcing
  • Hygiene, sanitation, and product quality at the highest global standards
  • Direct guest engagement across the counter in Japanese and English
  • Training, mentoring, and elevating the next generation of sushi professionals
  • Collaboration with ownership and culinary leadership on experience, sourcing, and creative direction


You Bring


  • 10+ years in elite sushi kitchens, including Michelin-starred or World's 50 Best-level restaurants
  • Mastery of Edomae fundamentals: rice, fish prep, knife skills, and seasonality
  • Polished presence and communication when interacting with VIP clientele
  • Deep fluency in Japanese culinary tradition, regional seafood, and etiquette
  • Bilingual fluency in English and Japanese
  • Calm under pressure, with a focus on structure, standards, and mentoring
  • Relentless attention to detail—and a genuine love for the craft
