Key Responsibilities:
- Curate and execute an exceptional omakase menu featuring high-quality, seasonal ingredients.
- Fabricate, prepare, and present a variety of sushi and sashimi using advanced Edomae-style and contemporary techniques.
- Engage directly with guests, explaining dishes and providing insights into the ingredients and preparation process to enhance the dining experience.
- Maintain inventory of fresh seafood, ensuring the highest quality and freshness.
- Collaborate with suppliers to source rare and premium ingredients.
- Oversee the cleanliness, organization, and maintenance of the sushi bar, adhering to strict food safety and hygiene standards.
- Train and mentor kitchen staff to support omakase service and uphold culinary standards.
- Innovate and develop seasonal offerings, experimenting with creative flavor pairings and plating techniques.
Qualifications:
- Minimum 5 years of experience as a sushi chef, with at least 2 years in a lead omakase role.
- Mastery of knife techniques and fish fabrication, including the ability to work with premium seafood.
- Strong understanding of traditional Japanese cooking principles, seasonal ingredients, and rice preparation.
- Ability to create a personalized dining experience with excellent communication and presentation skills.
- Passion for providing exceptional hospitality and attention to detail.
- Knowledge of inventory management and sourcing high-quality ingredients.
- Flexibility to work evenings, weekends, and holidays as needed.
