Position Summary
As Head Chef, you will be the creative and operational heart of our kitchen. You will lead a talented culinary team, maintain the highest standards of food quality and presentation, control costs, and actively shape our evolving menu. This is a hands-on leadership role where you will drive consistency, mentor talent, and engage directly with guests to deliver memorable Asian and Sushi dining experiences.
Primary Duties and Responsibilities
- Champion exceptional guest service. Ensure every plate that leaves the kitchen reflects our commitment to quality, beauty, and flavor.
- Build a positive kitchen culture. Foster an inclusive, respectful, and high-performing environment rooted in teamwork, creativity, and passion for Asian cuisine.
- Lead all kitchen operations. Oversee daily production, sushi stations, hot kitchen, and prep areas in a fast-paced, high-volume setting.
- Drive menu innovation. Develop exciting new sushi rolls, sashimi, small plates, and Asian fusion specialties while maintaining signature dishes.
- Master cost and inventory control. Manage food and labor costs, purchasing, inventory, and supplier relationships to ensure profitability without compromising quality.
- Ensure uncompromising standards. Maintain strict food safety, hygiene, and sanitation protocols in compliance with all local, state, and federal regulations.
- Mentor and develop the team. Lead, train, and inspire kitchen staff with structured programs that support growth and internal advancement.
- Engage with guests. Interact on the floor to gather feedback and build lasting relationships.
- Maintain equipment and systems. Proactively manage kitchen equipment upkeep and utilize ordering, scheduling, and payroll platforms efficiently.
- Perform leadership duties. Conduct performance evaluations and handle additional responsibilities as needed.
Minimum Qualifications
- Culinary diploma from an accredited institution and 5-7 years of experience as a Chef (or Sous Chef progressing to Head Chef) in a high-volume restaurant, preferably with strong Asian and Sushi focus.
- Deep passion and hands-on expertise in Japanese cuisine, sushi craftsmanship, and Asian fusion techniques.
- Proven ability to build, lead, and develop high-performing kitchen teams.
- Strong knowledge of food costing, inventory management, and menu engineering.
- Ability to lift and carry up to 40 lbs.
- Valid food handler certification.
- Flexibility to work evenings, weekends, and holidays in a dynamic restaurant environment (including occasional exposure to smoking areas).
