Job Description
Job Summary:
Chef de Cuisine is recognized as a manager of the kitchen. The Chef de Cuisine trains and develops all culinary & stewarding team members within the culinary department while maintaining and enhancing applicable standards.
ESSENTIAL FUNCTIONS:
- Demonstrate strong culinary skills and practice safe food handling techniques, preparation, and cooking procedures.
- Works with the Executive Chef and Executive Chef Sous to oversee and lead the culinary team.
- Provides hands-on training for staff
- Establishes cross-training guidelines for all culinarians to build strength and upward mobility.
- Verifies that prepared food meets recipe requirements for quality and quantity.
- Create daily specials within the specific season, along with seasonal menu changes.
- Runs daily line-ups with team members to review daily & weekly goals along with hotel information.
- Manage weekly staff scheduling according to business volumes
- Assist with monthly inventory, portion, and waste control.
- Maintains sanitation, health, and safety standards in work areas.
- Follow the opening and end-of-day closing procedure of the kitchen.
- Assist with the employee performance review process.
- Other duties as assigned
Education: High school diploma or general education degree (GED)
Required Experience:
The person in this position needs to:
- Minimum 4 years of culinary experience
- Reliably commute or plan to relocate before starting work
Knowledge, Skills, & Abilities
- Ability to multitask in a high-volume food sales environment
- Robust knowledge of food and workplace safety
- Ability to work nights, weekends & holidays as required
- Excellent organization and time management skills
- Set a positive tone and strong work ethic, leading by example.
- Knowledge of various dietary restrictions
- Maintain professional presentation (must adhere to company and department dress code)
- Outstanding guest service skills
- Ability to clearly communicate both verbally and in writing
- Strong knowledge of pricing, budgets, and cost controls, particularly in the areas of food and labor
